Summer Salad

My FAVE summer salad (keto & diabetic friendly)
1 cucumber
Cherry tomatoes
2 Avocados
100g Feta
Balsamic vinegar
Lemon
Salt & pepper to taste
Chop cucumber, tomatoes, avocado and add to bowl, sprinkle feta over top.
Add balsamic vinegar, lemon juice and salt and pepper to your taste
Mix together and serve!
Last night I had mine with a delicious eye filet - a meal packed full of nutrients that will not raise my insulin or blood sugar levels 🥰
