Keto Egg Loaf

  • 6 eggs
  • 1 cup colby cheese, shredded
  • 1 cup broccoli florets, lightly chopped
  • 3 Tbsp coconut flour
  • 2 tsp baking powder
  • salt and pepper to taste

DIRECTIONS:

  1. Preheat the oven to 180 degrees C. 

  2. In a bowl, combine eggs, cheese, broccoli, coconut flour and baking powder. Add salt and pepper to taste. Mix until well combined. 

  3. Spray or coat a baking dish with oil and pour the mixture evenly into the pan. Bake for 30 to 35 minutes, or until golden. 

  4. Serve in slices and enjoy!
