- 6 eggs
- 1 cup colby cheese, shredded
- 1 cup broccoli florets, lightly chopped
- 3 Tbsp coconut flour
- 2 tsp baking powder
- salt and pepper to taste
Preheat the oven to 180 degrees C.
In a bowl, combine eggs, cheese, broccoli, coconut flour and baking powder. Add salt and pepper to taste. Mix until well combined.
Spray or coat a baking dish with oil and pour the mixture evenly into the pan. Bake for 30 to 35 minutes, or until golden.
Serve in slices and enjoy!
